A winery built in ancient quarries
The story of Bailly Lapierre began in 1972, when a group of Burgundian winemakers decided to revive a special location. They chose the impressive underground limestone quarries of Saint-Bris-le-Vineux, near Auxerre. These former quarries, some galleries of which date back to the Middle Ages, proved to be the perfect place for sparkling wines to mature.
The constant climate of approximately 12 °C and high humidity provide ideal conditions for Crémant to develop slowly. Thanks to this natural cellar, the wines acquire their refined mousse, complex aromas, and elegant style.
Burgundy: the cradle of great Chardonnay and Pinot Noir
Bailly Lapierre works exclusively with grapes from Burgundy, a region renowned worldwide for its exceptional terroir. The chalky soils, temperate climate, and centuries of wine tradition form the ideal basis for grapes with freshness, finesse, and beautiful minerality.
For the Crémants, Chardonnayand Pinot Noirare mainly used, supplemented with grape varieties such as Aligotéand Gamay, depending on the cuvée. This combination results in sparkling wines that are fresh and vibrant, yet possess great depth and elegance.
Made using the traditional method
All Crémants from Bailly Lapierre are produced using the Méthode Traditionnelle, the same method also used in Champagne. After the first fermentation, the wine undergoes a second fermentation in the bottle, creating the fine, natural bubbles.
The Bailly Lapierre Réservethen receives prolonged aging on the lees. This extra aging provides refined aromas of brioche, toasted bread, and subtle nutty notes, while preserving the fresh fruit and lively acidity. The result is an elegant Crémant with a soft mousse, fresh citrus aromas, ripe apple, and a long, refined finish.
